Cranberry + Orange Oatmeal Bowl

Oatmeal is the least complicated food there is. It makes our mornings easier with one less decision to make. But even with that, I love to mix it up with different toppings. I always love a sweet breakfast, so stewed fruit is my friend, and especially in this weather it is the most comforting + fulfilling. This version uses cranberries and oranges which are fall/winter staples, and pair amazingly well. The sweetness from the orange helps cut the sharp tartness of the cranberries, and also requires lesser sweeteners to balance it out. The oatmeal is cooked with a mashed banana as a natural sweetener + makes the bowl truly nutrient packed, and you’ll be all set for the day ahead!

Ingredients

For the Cranberry + Orange

  • 1 cup fresh cranberries

  • Juice of 1 orange

  • 1/2 tsp orange zest

  • 1 tbsp honey

  • 1/2 orange, sliced into 1/4 cm thick rounds

  • 1 sprig rosemary

  • 1 stick cinnamon

  • Pinch of salt

For the Oatmeal

  • 1/2 cup old fashioned rolled oats

  • 1 1/4 cups water

  • 1/4 tsp cinnamon powder

  • Pinch of salt

  • 1 medium banana, mashed

Method of Preparation

  1. For the cranberry + orange, place all the ingredients in a wide non-stick pan, and cook over low heat for 12-15 minutes.

  2. In the meantime, place all the ingredients for the oatmeal in a small saucepan. Cook over low/medium heat for 10-12 minutes.

  3. Spoon oatmeal into a bowl. Top with the cranberry + orange. Add a dollop of yogurt and an extra drizzle of honey, if you like, and enjoy!
