Dark Chocolate + Sea Salt Energy Balls
During the week my schedule is fairly erratic with testing recipes and guiding classes. Neither fall into a fixed schedule so it becomes a mad rush on some days, and I love having some nibbles around the house that can keep me going before the day is over and it’s time for an easy relaxed dinner. Energy balls give a perfect boost of sustained energy given the nutrient dense ingredients it’s made of, and allows one to stay satisfied for longer without experiencing a sudden dip in sugar levels. And making them chocolate-y makes them that much more enticing to reach for in place of a sugar-y candy bar or other snack that is only empty calories. Sea salt is a great pairing with sweet, particularly chocolate, and helps bring out the flavour of the chocolate beautifully.
Ingredients
For the balls
200g dates
50g almonds
2 tbsp almond butter
1 1/2 tbsp cocoa powder
1/2 cup rolled oats
1/2 tsp vanilla essence
1/2 tsp cinnamon powder
Pinch of salt
For the coating
90g dark chocolate, melted
Sea salt flakes, for sprinkling on top
Method of Preparation
Blend all the ingredients for the balls in a food processor, till it comes together well like a fine powder that can bind. Form into little balls.
Melt the dark chocolate for the coating in a double boiler. Using a spoon, dip each ball into the melted chocolate, roll and allow it to coat completely before transferring onto a parchment-lined tray. Repeat for all the balls. Sprinkle over the sea salt flakes, as desired. Transfer to the refrigerator to allow the chocolate to set for 1-2 hours.
