Dark Chocolate Tahini Bark

Recently we ran out of fruit and nut based chocolate bars that we usually buy from the store on our weekly rounds, but had a grand stash of cooking chocolate at hand. So I decided to make our own fun chocolate with an assortment of toppings that we love. It turns out to be a great way to expand chocolate to be available as dessert after more dinners + add a generous helping of the good stuff to your diet. We already know at this point that dark chocolate is a source of antioxidants, and a piece of it a day is good. I’m very biased towards chocolate, so this is gospel in my world!

This version uses tahini to cut the plain-ness of the dark chocolate + create some pretty swirls. In the process it is also packing a punch with its host of nutrients + good fats. It has been touted as being great for better bone health and also as a source of antioxidants. Nuts and dried fruit without added sugar, like apricots and figs, make another layer of goodness. And a few pretzels add a nice crunch to every bite + the sea salt on them works as the perfect cherry on top of this lovely ensemble!

Ingredients

  • 240g 70% dark chocolate

  • 2 tbsp coconut oil

  • 50g tahini

  • 1 tbsp maple syrup

For the topping

  • 12-15 baked pretzels

  • 25g mixed nuts, roasted

  • 25g dried figs, chopped

  • 25g dried apricots, chopped

  • 1tsp white sesame seeds

Method of Preparation

  1. Line a baking tray with parchment paper, set aside.

  2. Place the dark chocolate + 1 tbsp coconut oil in a double boiler to melt. Once melted, mix well to combine.

  3. When the chocolate is melting, in a small bowl, mix together the tahini + maple syrup + remaining 1 tbsp coconut oil.

  4. Pour the melted chocolate onto the baking tray, and even out using a palette knife. Drizzle over the tahini mix and use a toothpick to create swirls by moving it in the shape of the figure 8.

  5. Top with the pretzels + roasted nuts + dried figs + dried apricots + sesame seeds.

  6. Place the chocolate in the freezer for 10-15 minutes to set. Remove from the freezer, cut into pieces and store in the refrigerator in an airtight container.
