Dreamy Creamy Chia Pudding

Chia seeds have become so popular in recent times for their fibre and omega-3 content. They are also great to help in better digestion, and I have to say I’ve seen it works wonders for me personally. With all the good that it brings, for some of us it still feels “too healthy” or “tasteless” - as I’ve heard from people. But that is so far from the truth! There’s so many ways to tailor this bowl of goodness to the flavours that call to you. Here’s one simple version with peach and lime flavours that are personal favourites. There are several brands that are now doing naturally sweetened jams, preserves and compotes which allows to simplify that one step. Lime and lemon zest have an elegant way of bringing out flavour + the citrus adds a freshness that balances out the creaminess of the yogurt. Using a thick yogurt like greek is ideal for this recipe, although you can always substitute a creamy coconut/oat yogurt depending on what you’re used to. As with everything else, there are so many ways that this can be modified to suit your tastes and needs. Do give this a try and I’d love to hear what you think.

Ingredients

For the pudding

  • 4 tbsp chia seeds

  • Pinch of salt

  • 1/4 tsp cinnamon powder

  • 1/4 tsp nutmeg powder

  • 1 1/2 tbsp naturally sweetened peach jam

  • 1 1/2 tbsp honey

  • Zest of 1 lime

  • 1 cup greek yogurt

  • 1/3 cup water

For the topping

  • 1 kiwi, sliced

  • Handful blueberries

  • Honey roasted nuts

Method of Preparation

  1. Whisk together all the ingredients for the pudding, and set in the refrigerator for at least 1 hour and up to overnight. Remove from the refrigerator, give the pudding a good stir.

  2. Divide the pudding into two bowls, and top with the sliced kiwi, blueberries and honey roasted nuts. Add a little more lime zest if you like, and you’re all done.

  3. Enjoy this quick, easy and nourishing bowl for breakfast or as snack!
