GF Chocolate Caramel Oat Pancakes

Pancakes are such a weakness that being able to make tastier options that are healthier is truly a mega win! These are also so simple to make, using a blender to whisk all the ingredients together, that I definitely believe they can feature on more days than just weekends. This is possibly more true given we’re all at home for much longer these days, and not rushing out to anything early in the morning. The base for these pancakes is oat flour again, making them gluten free and a great source of fibre. I’m using both a banana + some dates as natural sweeteners, and they add so much nutrient value on their own as well. The dates paired with the maca root powder lend the lovely caramel-y flavour. Orange extract steps in instead of vanilla for these as I am using clementines as the accompaniment, but you’re free to choose your adventure!

Ingredients

  • 1 large ripe banana

  • 2 medium eggs

  • 2/3 cup oat flour

  • 1/4 tsp cinnamon powder

  • 1/4 tsp baking powder

  • Pinch of salt

  • 2 tbsp cocoa powder

  • 1/2 tsp maca root powder

  • 5-6 dates

  • 2/3 cup skimmed milk

  • 1/4 tsp orange extract

  • Knob of butter, for cooking

For the toppings

  • 2 clementines, sliced

  • 2 tbsp mascarpone

  • 1 tbsp smooth peanut butter

  • 1 tbsp honey + more honey for drizzling

Method of Preparation

  1. Place all the ingredients for the pancakes in a blender and blend well. Transfer to a bowl, and let it rest for ~15 minutes.

  2. Pre-heat the oven to 100°C. Place a baking tray in the oven to transfer the pancakes as they are done, so that they stay warm till serving.

  3. Place a large non-stick pan/ on the stove, and bring to medium heat. Add a knob of butter, and as it melts spread evenly across the pan using a kitchen towel. Add 2 tbsp batter for each pancake, making as many at a time as possible with adequate space between them to be able to flip. Allow to cook till you see bubbles forming on the top, then flip and cook for another 30 seconds. Transfer the pancakes to the tray in the oven. Repeat the process till all the batter is used.

  4. To make the peanut butter cream, place the mascarpone + peanut butter + honey in a bowl and whisk to combine.

  5. To assemble, place a pancake on a plate, top with some peanut butter cream + sliced clementines, and repeat till you have your desired pancake tower height. Drizzle over with more honey, and enjoy!
