GF Sweet Potato + Coconut Milk Pancakes
With chilly weather still in place, and rain predicted tomorrow, sweet potatoes are cozy + comforting favourite in my kitchen. I like how they add body to any dish and especially with respect to these pancakes - so extremely fluffy and soft! I’d usually use a banana for similar effect, but I love how subtly sweet this version is. And coconut milk just takes it up a notch! Even if you’ve got no beef with dairy, the coconut milk in these pancakes will have you doing a double take. Since Pancake Day is around the corner, it felt appropriate to share this beauty with the world. Have fun with all the syrup and toppings, go bananas!
Ingredients
1/3 cup GF flour
1/2 tsp cinnamon powder
Pinch of salt
1/2 tsp baking powder
1/8 tsp baking soda
1/3 cup sweet potato purée
1 large egg
1/3 cup + 2 tbsp coconut milk
1/2 tsp vanilla extract
Method of Preparation
Whisk together all the ingredients for the batter.
To a pan on medium heat, add a little knob of butter (use vegan for DF option). Once the butter melts, swirl the pan to evenly coat or use a paper towel.
Add 1/4 cup batter at a time to the pan. Once bubbles begin to appear on the surface and it’s glossy, then flip the pancake. Cook for another minute. Set aside or on a tray in the oven at 100°C to keep warm.
Top with berries, chopped pecans, a generous drizzle of honey, and enjoy!
