Healthy Snickers Bars

One of my favourite candy bars has been the famous snickers, given the lovely peanut and chocolate combination with a nice nougat base. But I wouldn’t find myself indulging in them, except on occasion. So a healthier version with power packed ingredients would be more than welcome, especially if it tasted as good if not better than the real deal. If you don’t believe me, you’ve got to try it for yourself. It’s perfect as a post-workout pick-me-up, and doesn’t take very much time to make!

Ingredients

For the nougat base

  • 1/2 cup rolled oats

  • 1/2 cup roasted peanuts

  • 1/8 cup coconut oil

  • 1 tbsp honey

  • 1/2 tsp vanilla essence

  • Pinch of salt

For the caramel layer

  • 200g dates

  • 2 tbsp peanut butter

  • 1/2 tsp maca root powder

  • Pinch of salt

  • 1 tbsp water

For the coating

  • 100g dark chocolate

Method of Preparation

  1. Blend together all the ingredients for the base using a food processor. Transfer to a lined brownie tin or baking tray. Press down firmly, and keep in the refrigerator to allow it to set while you make the next layer.

  2. Blend together all the ingredients for the caramel, making sure that it comes together well and is smooth. Remove the tray from the fridge. Add the caramel layer on top, and spread evenly. Transfer back to the refrigerator, and allow it to set for at least 3-4 hours.

  3. Melt the chocolate for the coating in a double-boiler. Remove the tray from the refrigerator. The base and caramel layer should have set completely so that you can remove it easily out of the tray. Slice into bars or squares, per your preference. Using a spoon, dunk in the melted chocolate, allowing all sides to be coated well. Transfer back to a lined tray. Repeat for all the bars. Place the tray in the refrigerator again for ~1 hour, so that the chocolate sets.

  4. And, enjoy at any time of day!

Note: Once it sets, transfer to an airtight container. Keeps for a few days in room temperature, and one week in the refrigerator.
