Onion + Thyme Scrambled Eggs
I think eggs are the epitome of breakfast food because they can transform the most ordinary day to eggcellent (that was right there!), if it’s cooked right! Eggs are soul food and on particularly rainy or dreary mornings, they make me feel warm and comforted. More often that not, I’d prefer eggs in pancakes, but there’s always a day in between when a savoury version is more desired.
Ingredients
1/2 medium red onion
1 bird’s eye chilli
1 tsp fresh thyme
2 large eggs
1/4 tsp garlic powder
Pinch of baking soda
1 tbsp olive oil
Salt to taste
Method of Preparation
To a pan, add the olive oil. Add the onion and sauté for a minute. Then add the salt and allow it to cook for ~10 minutes or till they’re soft and light pink. Add the chilli + thyme and allow it to cook for a couple of minutes.
In this time, whisk together two eggs with the garlic powder + baking soda.
Add the egg mix to the pan. Allow the egg to cook a little before swirling with the spatula to create egg curds.
Enjoy hot with a side of toast!
