Passion Fruit Baked Yogurt
There’s so much passion fruit in the market, that I couldn’t resist buying a whole lot. It is so refreshing and it’s always a thrill to bite into the little black seeds. It is really bright with it’s flavours and so pairs beautifully with something more neutral like yogurt. Baking yogurt is quick and feels like a nicer treat than just a bowl of plain yogurt with fruit. It is the festive season after all, so the perfect time to be a little extra with everything. Add a generous helping of winter fruit on top and you’ve got yourself a lovely little bowl of goodness!
Ingredients
For the baked yogurt
250g hung yogurt
125g mascarpone
120g honey
1/2 tsp vanilla extract
1 tbsp arrowroot starch
1 egg
1 tbsp passion fruit juice, seeds discarded
For the topping
50g passion fruit
1 tbsp honey
Method of Preparation
Pre-heat the oven to 180°C.
Place all the ingredients for the baked yogurt in a large mixing bowl, and mix well to incorporate using a handheld mixer. Transfer the mixture to 4 ramekins. Cover with kitchen foil.
To a large roasting tin, add ~1 inch depth hot water. Place the ramekins in the hot water, and bake for 30 minutes. Remove from the oven, remove the kitchen foil, and return to the oven to bake for another 25 minutes. Remove from the oven, and allow to cool completely. Cover with kitchen foil, and refrigerate overnight.
For the topping, mix the passion fruit with the honey. Spoon over the baked yogurt, and top with any other fruit of your choice.
Serve as part of a brunch spread, or as a quick snack!
