Plum Ginger Jam
The easiest snack for us is a couple of slices of bread with peanut butter and jam, always! It’s more wholesome than reaching for the crisps and I for one definitely prefer the satisfying feeling after a nice slice of PBJ toast. So jam is therefore a staple at home, and I like to make my own with different fruit, depending on the season, to keep it free of refined sugar and additives. It’s also the easiest to make, with about 5 minutes of actual work, and then just letting the fruit and spices stew on their own while you forget about it and go about your day. (Don’t forget to set a timer, though!)And that feeling when you’ve made something fresh, from scratch, and the whole house is cinnamon scented - truly unbeatable!
Ingredients
4 ripe plums
1 stick cinnamon
2 cloves
Juice of 1 lemon
1 tsp grated fresh ginger
2 tbsp maple syrup
1/4 tsp sea salt
Method of Preparation
Add all the ingredients to a saucepan, cook on medium heat till it comes to a boil.
Cover and cook on simmer for ~1 hour.
Remove the lid and stir till it all comes together.
Turn off the heat, and allow the jam to cool completely before transferring to a jar.
Enjoy on hot toast with some peanut butter!
Note: Keeps in the refrigerator for 4 weeks.
