Roasted Apple + Cinnamon Loaf

The weather is quickly changing and slowly the bigger coats are coming out of the winter closet. Snuggling under a blanket with a book and a cup of coffee feels most appropriate. A piece of cake to go with it would be an added bonus, obviously! I’ve had some apples lying around, and haven’t felt up to eating them fresh in the morning. So, instead, it seemed like a much better idea to make a loaf that would use up the apples and last us a while as we enjoy some quiet reading time. The roasted apples add a nice mild sweetness to the loaf, and it’s best friend cinnamon gives the perfect hit of spice. Some lemon zest adds a nice zing to it all, and pairs fantastically well with tea, coffee or even a cup of warm milk.

Ingredients

For the roasted apples

  • 3 medium sized pink lady apples, cored and quartered

  • 1 tbsp butter

  • 1 tbsp honey

For the flour mix

  • 1 cup buckwheat flour

  • 1/2 cup ground almonds

  • 1 tsp baking soda

  • 1 tsp cinnamon powder

  • Pinch of salt

For the wet mix

  • 2 eggs

  • 1/3 cup honey

  • 1/3 cup butter

  • 1 tsp vanilla essence

  • 1/4 cup milk

  • Zest of 1/2 lemon

For the topping

  • 1/2 apple, sliced thin

Method of Preparation

  1. Pre-heat the oven to 200°C. Grease and flour a 900g loaf tin, and set aside.

  2. Toss the apples with the butter and honey. Transfer to a lined baking tray, and roast for 35-40 minutes. Remove from the oven, and set aside to cool.

  3. Add the cooled roasted apples + all the ingredients for the wet mix to a food processor and blend well. Sift the ingredients for the flour mix together. Gently fold into the wet mix till well combined. Transfer the batter to the prepared loaf tin, and top with the apple slices. Bake at 180°C for 30 minutes with both top and bottom heat on. Then bake for another 20 minutes with just the bottom heat on. Check if a toothpick comes out clean, and remove from the oven. Allow it to cool a little before transferring onto a wire rack to cool. Keeps at room temperature for a couple of days, and in the refrigerator for a week.

  4. Enjoy a warm slice with a cup of coffee!
