Spiced French Toast

Over the weekend we went to get some coffee at our local coffee shop, and found some lovely freshly baked loaves of brioche bread. It would’ve been criminal to come back home without one, and that’s the story of how the last couple of days have been French Toast heaven here at our house. It’s one of the easiest things to cook in the morning. And no matter how old I get, I don’t think I can get tired of these lovely enhanced breakfast toasts. It’s so amazing for those who aren’t keen on an omelette in the morning but prefer something mild and sweet. This version uses just a little brown sugar in the custard mix to allow the bread to brown beautifully, and the rest can be sweetened with maple syrup later depending on how sweet you like it. Berries add a nice burst of freshness for contrast, and a dash of (brandy) cream will most definitely brighten it up!

Ingredients

  • 5 slices of brioche bread

  • 2 large eggs

  • 2 tsp soft light brown sugar

  • 1/4 tsp cinnamon powder

  • 1/4 tsp ground cloves

  • 1/8 tsp ground ginger

  • 1/2 tsp vanilla extract

  • 1/3 cup milk

  • 2 tsp unsalted butter

Toppings

  • Maple syrup

  • Handful berries

Method of Preparation

  1. Whisk together the eggs + soft light brown sugar + cinnamon powder + ground cloves + ground ginger + vanilla extract.

  2. Place the milk in a small saucepan, and heat gently till steaming. While continuously whisking the eggs, add the steaming hot milk ~1 tbsp at a time to incorporate. Transfer the mixture to a wide bowl. Soak the bread slices in the mixture for ~15 minutes.

  3. To a large non-stick pan on medium heat, add 1 tsp butter. Allow it to melt and coat the pan. Place 2-3 slices of soaked bread at a time. Cook till brown on one side, then flip and cook till nicely browned.

  4. Serve hot with a generous drizzle of maple syrup and some berries.
