Summer Bliss on Sourdough Toasts

With the onset of summer comes the delightful overload of fresh and juicy tomatoes and strawberries. Paired together with some cheese on toast, like here, and the flavour quotient really elevates to a whole new level. It’s satisfaction on a warm sultry day, and also perfect to woo a loved one whether as part of a breakfast in bed spread, or as a packed snack for a romantic picnic outdoors.

Ingredients

  • 2 large slices sourdough bread

  • 60 g goat’s cheese

  • 2 vine tomatoes, diced

  • 10-12 strawberries, diced

  • 10-12 fresh basil leaves, chopped

  • 1 bird’s eye chilli, chopped

  • 1 clove garlic, grated

  • 1 tbsp + dash of olive oil

  • Dash of balsamic cream

  • Salt to taste

Method of Preparation

  1. To a wide pan, add a dash of olive oil. Toast the sourdough bread till it browns on both sides. Set aside.

  2. Add the goat’s cheese and a dash of olive oil to a food processor. Blend well till it becomes thick and creamy. Mix the grated garlic into the whipped cheese. Set aside.

  3. To a bowl, add the tomatoes + strawberries + basil + chilli + salt + dash olive oil + dash of balsamic cream. Mix well. Set aside.

  4. Assembling it all - add a generous dollop of the whipped goat’s cheese onto a slice of sourdough toast, and even out. Top with a generous amount of the tomato + strawberry mix.

  5. Enjoy immediately!

Note: If you choose to pack these toasts for a picnic, pack the different elements separately and assemble at the time you wish to eat as they can otherwise become soggy.
